Considering GOG's generous reputation in offering the soundtracks with the games they sell, why doesn't Unreal Gold have its soundtrack available for download? Or any of the Unreal games, for that matter? I guess you can listen to the soundtrack in the game files, but as I recall, it's very difficult to burn the songs on Cd (so I can listen to it anywhere). Since Unreal has an awesome soundtrack, why is it not an addition to Unreal Gold on my account?

If something isn't available, ALWAYS assume it's because of legal problems. (I don't mean to be rude; it's just that this kind of stuff tends to get asked alot and it's frustrating that more people don't realize this.) There were various composers that worked on the soundtrack; GOG probably couldn't strike a deal with all of them.

For this soundtrack, you can get it here:
http://www.mirsoft.info/gmb/music_info.php?id_file=OTcy -> Create an Account -> "Download Game Music in ZIP archive!".

The music is in .IT and .S3M files, which can be played easily with (popular example) the VLC Media Player. To get them into mp3s, however, you might have to try a form of conversion software.

As far as I can tell, GOG is aware that soundtracks are the #1 kind of desired bonus content (with almost 1500 votes on the wishlist), but they cannot simply supply the soundtracks without having to go through the correct channels.

As tfishell already said, it's probably legal problems. You can however easily convert the
music files yourself. The music is included in the UMX tracker format. There are some MOD music
players that are not only capable of playing UMX files but also to easily export them as MP3s.
A quick google search said that the Modplug player is capable of doing that.

How is it legal problems, they're in the game you bought.
If I have to let the game idle to listen to the music, i will.

NedLand:
Another way of doing this is to simply seek out the files in a post conversion format already. You could go to this YT playlist of the OST:

https://www.youtube.com/watch?v=PXBcPUm83KI&list=PLFqTvOsjFbRpUShtLy2nJBjl-3IohCEph

From there you would just have to use an online service such as:

http://www.youtube-mp3.org/

Supply it the URLS of the individual tracks and it spits out mp3s.

EDIT: Thought I'd add that the Mp3 site is free and all done on the site so no signup or installation, and something I've used a handfull of times so I know it works.

I would love an update to this, especially the original Unreal soundtrack. It would be so awesome! I understand if we need to pay more money. Myself and I am sure others would be happy to pony up some as this was one of the greatest game soundtracks of all time!

I don't think anything's changed, unfortunately. Your best best is to download the music elsewhere -

https://www.google.com/#q=unreal+gold+soundtrack+download

- or listen to it on YouTube (you could use a "YouTube To MP3" service to download the music off YouTube, also) -

ZeaLitY from the Beyond Unreal community compiled the soundtracks for every single Unreal game (including beta and unused tracks) into one huge collection. It was all converted properly to standard formats when necessary too. It was available as a torrent called "Unreal Series Complete Music Collection". I believe he got the blessing of EPIC at the time, although I can't find the evidence of this now. The best thing for all you people wanting Unreal soundtracks would be to revive that torrent. Last time anyone made an effort to seed it was in 2015.

Just go here and get the full 50 track soundtrack in flac format witha quality of 384000Hz and 32 bits per sample.
For the actual, full and complete soundtrack, this is the go-to:
https://www.youtube.com/watch?v=AUidYvGaHgI

Great channel overall. Any soundtrack the guy publishes is THE complete package. Includes all the various beta, pre-release or even unpublished tracks. All the tracks are also cleaned up of any popping, artefacting and such, which won't disappear even if you bump the originals to some insane quality like mentioned above. Bet you had no idea there was over 5 and a half hours of Unreal 1 music.

If official soundtracks were this well done and complete, I wouldn't mind actually paying for them.

OK? Not sure why you quoted me, but the video I linked has far more music than what you can find in the game files.

If the above soundtracks are ever down, at least you'll still be able to listen to much of the music, but not all of it.

True. The joys of back when all music was easily accessible in the game files. Nowadays, it's always hidden behind some proprietary compression and can't be easily accessed, while they offer you an incomplete soundtrack for paying extra. By buying the game, you already have access to the music too. Always disliked this extra money gouging.
