Go to your Ultima IX Ascension directory (in Win 7 its Program (x86)\Gog.com\Ultima iX - Ascension) find the program file nglide_config and run it. It should give you among other video options the resolution you want.

I can run nglide_config, yet when I re-launch the game, it is not in widescreen mode. I've tried the 'fit to screen' setting, as opposed to 4:3 ration, but it still is not filling the whole screen. How can I fix this?

Look near the end of the options.ini file in main game dir--I'm using D3d (not GLIDE) and it handles 1920x1200 perfectly....
However this is still running the game in a 4:3 box inside of 1920x1080 resolution. Or using the Glide config which comes with GOG, you can set the game to 1920x1080 but then it's stretched. There is no proper widescreen field of view setting as far as I can find. Without hex editing the game's EXE from what I can find online. Unfortunate.
