So I played with the Graphics Setup but couldn't find a way to configure EGA mode. Does anyone know of a program on the net that maybe able to configure GOG's version of Ultima II in EGA mode? Maybe not due the age of the software. To bad GOG didn't add it when the ported.

The original only was CGA. Here is a link to an unofficial / fan based patch with instructions:

Please note that the windows install file does not work with gog download. You have to follow these instructions.
First download ultima 2 upgrade
1) You will want to run dosbox
2) You will want to mount you install folder in dosbox
3) You will want to change directories to c:
4) You will want to run the upgrade file u2up.exe
5) go through and install the options you want
6) once complete you don't need to do that again. Please note that you cannot launch ultima 2 from the install launcher anymore.
7) next you want to launch ultima through the same dosbox. I believe it is ultima2.com
