I've beaten Ultima 6. I want to do another playthrough but I can't, because you can only have one character at a time. There has to be a work around. I've deleted Cloud Save folder on and offline. No luck. I've uninstalled and re installed but it just has my character saved!!!

Yes, I chose the option to remove all save game files.

Am I doomed to only have one playthrough?

The way to do this that I remember was to run the INSTALL program (the same program you'd run to configure your sound card) and choose at the end to clear the current character (or however it's worded there).

I don't remember whether GOG gives you a handy shortcut to run INSTALL (in DOSBox) or not.

Not sure what you mean at all. Do you mean a DOSBox cmd prompt? Because I've already uninstalled the game and re-installed the game...shamefully 3x now.

When I run the GOG version of Ultima VI, it starts DOSBox and gives me a menu with options:
1) Ultima VI: The False Prophet
2) Game DOS Settings

(see attached image)

You need to go through option 2 (Game DOS Settings) in order to erase your current character and be able to create a new one.

the answers to the installer's questions should be
H
C
5
Y
<whatever sound device works for you>

...and then choose option 1 at the last question to erase your existing character (see other attached image).

For sound I found that midi works but the original is adlib.
