I was hoping for the option to just install the dark project and not gold.

I don't think that's possible, unfortunately, but it's not GOG's fault. Square-Enix have been selling Thief Gold as part of the Thief Collection, and it's the version they've given GOG to sell, so unless they decide to let GOG sell the Dark Project version as well, you're probably out of luck.

It's likely that the only way to get the original Dark Project version is to buy a used copy of the original disc somewhere.

Having said all that, I hear that the Gold version essentially restores content that was originally intended to be in the game but was cut due to limited time. So it very well could be the "best" version in terms of what the developers intended.

Ah, well, understand I am not complaining, Thief is my absolute favorite game, I bought the game in a heartbeat when I saw it on the front page. I never got into the extra missions, but now that I'm older, I guess I can give them a try. I do have a copy of thief 1 and 2 on disc around, I got thief 1 working perfectly, thief 2 wont even launch lmao. When thief 2 comes to GOG, I'll buy it again! be sure of that. Alright, time to go do more thieving!

why would you want a lighter version of the game instead of the complete one?

AFAIK the Gold Edition also contains a bunch of bugfixes.
