Why was patch v1.03 and v1.04 taken down from GoG? Some people might want to revert to a previous patch because of the issues with a new patch is worse than what was there prior. Can you guys please put up the v1.03 and v1.04 patches back on and always keep every version of the patches available?

If you let your housekeeping be managed by GOG (or any other) - bound to run into different opinions of what can/should stay and what should not.

The 1.05 patch says 1.02+ -> 1.05. That means 1.05 incorporates 1.03 and 1.04 (if you have them already loaded, no harm, if not the 1.05 patch will do everything). That's to make it easier on people loading the game for the first time so they don't have to install 4 individual patches, just the 2. I'm sure additional patches will do the same (including 1.03 onward in the patch)

1.02 is special as that's just the 'key' to run the game.

It is kind of strange that they would remove the other two patches, since their plans with galaxy include rollback (not yet implemented):

"Sometimes game updates break things. Thanks to the built-in Rollback feature, you can restore your game to prior states with just a single click."
Removing the old patches from view is probably to not have people thinking they need to install older patches before they can install the latest one.

Actually I did. I have all the patches on my computer. But, given that GoG Galaxy talks about being able to roll back because updates can break a game, it is kind of strange of them to take away an option to at least reinstall the game to a certain version that was better for the customer.

OP told why specifically 1.03 or 1.04 - because the changes in 1.05 may give some people trouble, so they prefer an earlier version, where some issues are fixed, but the new ones not introduced yet.
Not recommended for the majority, but it would help some, so why not?
Really wish GoG would answer this thread. What was the point of getting rid of the past patches, when one of the "selling" points of GoG Galaxy was the ability to roll back when a patch messes something up. I know that functionality doesn't work yet, but it makes no sense to completely get rid of that option all together when there was a work around for it.

It's always been one of those things that's felt like a missed opportunity to me. Wouldn't leaving patches and vanilla versions of games up (thus giving the consumer a great deal of control) be a selling point that differentiates GOG from Steam and highlights the benefits of DRM-free?

Probably server space. That and their naming conventions for game versions and patches is just plain confusing.

Consumers still have any measure of control.
Consumers just have become lazy by relying on the "benefits" of handing over control to Steam and now (in a milder form) Galaxy.

The lures - we handle your (game-) file management for you, including updates, we give you achievements (what for??), we offer you some "social" functions (that may work, or not), etc.

It is a marketing thing: try to bind customers to the company.

Still, nothing keeps you from saving each downloaded piece of game, update, bugfix, whatever on your HDD.
It just needs a bit of initiative, a bit of additional work and space, nothing more.

If you make a point to constantly log in and check for new updates, sure, but it's kind of unreasonable to have to download every patch for every game as soon as it comes out (even if you're not currently playing that particular game) in order to have the freedom to patch to any version you want. Plus the update notifications on GOG are notoriously buggy. I haven't seen a single update flag for Witcher 3 yet.
