I think the update made it so you can no longer play offline. Is this true or am I missing something.

Why do you think that? The only parts you need a internet connection is for downloading patches, DLCs or the extras. Can you please explain your problem a bit more?

Not possible as Gog is DRM free and would never do that.

You are missing something.
Before you could actually select "Play Offline". I no longer can find that.
Unless you are using Galaxy to keep achievements, you play offline. Unplug your Internet cable to your PC and check.
See what Peetz wrote. Only that it was said: You don't need Galaxy at all (it is optional). You can run the game (and all other games from GOG) by double clicking the exe-file.
The exe-file for Witcher 3 can be found here: The Witcher 3 Wild Hunt\bin\x64 .

You can use a shortcut to launch the game from the desktop, in case you didn't know.
I figured it out. If you logoff you get the option to play offline, or continue to play offline rather.
