I recently bought the GOTY version of The Witcher 3 and after playing over 30 hours (and absolutely loving it!), I tried installing just one mod, the "Unlimited Durability" mod. I created a "Mods" folder inside the main game installation folder, but started getting script errors....

First of all let's make a check of what you need to run the specific mod.

This information can be found under the section "Description"->"About this mod".
Secondly let's check what version of the game and which patch you need to run the mod.

Here it states that the unification patch is not needed for this mod, based on the mod's supported versions.

Thirdly there is available a very helpful program, which can automatically manage your mods and reduce the margin for user error.
https://www.nexusmods.com/skyrim/mods/modmanager Best to follow the published instructions to the letter, before we experiment with the files and the game versions.
I suggest before you re-install any mods, to either verify the game files through GOG Galaxy, as gabsuviu mentioned, or completely uninstall the game and clean up any registry entries, before you run a clean installation of the game and the mod right after it. Please let us know (Shitory and AltStrauss excluded :D) if this works for you.
Edit; As already mentioned by eLeRs, the 1.32 patch of the game is non-crucial for gameplay (bug fixing, U.I. improvement, e.t.c.) and only adds support for the Chinese language. Since the mod you wish to use will probably not be updated any time soon, rolling back to v1.31 would be the only safely working solution for now (I guess).
