Every race, right from the start, my opponent gets in front and stays there till the end.
I gallop through the entire race but my horse stamina bar is not displayed
and galloping is slow compared to what I have seen on videos.
Could I be using an inferior saddle? Someone suggested a superior racing saddle.

The better the saddle, the more stamina Roach has. The more stamina, the longer the gallop. The longer the gallop, the more chance of winning. If you're serious about horse racing, you need the best saddle available.

Don't know what platform you are on, but on PC double tap->hold on "shift" key, for full gallop. You can block the other horse while regaining stamina. Also Reach can always catch on the other horse even partial regained stamina.

No stamina display, means you're cantering.

So I'm pretty sure that you are NOT galloping op, just cantering or whatever it's called, that is slower.

You guys could be right. I have assigned right ctrl for galloping and hold it down throughout the race.
If I release this button then Roach just trots. I am not aware of any other button to make him go faster.

As the guy above said, double tap and hold on the second tap.

How did anyone work out the "double tap"?
This works and made winning very easy.

Actually in later races, it's not enough, by itself.

It's in the horse racing help screen it says it.

There is a tutorial that explains it at the start of the game and it's always displayed on screen while riding and it's explained in the menu in even more detail. Short: It's mentioned and explained everywhere. Not sure how it was possible to miss this.
