I just bought The WItcher 3 game of the year form GOG.com when it was on sale for 23$. I was looking around on forums and other people were saying their game was 50gb but I'm installing mine right now and it only says 34gb. Do the expansion packs and dlc install after the game or what ? This is my first time using GOG.com so I have no idea :P

The game itself, including all DLCs, ls 34GB. However, on GOG.com there are oodles of optional 'goodies', including various language versions that can raise the total download by many gigabytes, so that's where the higher value comes from.

I was looking around other forums and some people said that if you want to install the expansion packs you have to wait for the game to install and then go to menu > Configure and install the expansion packs and DLC from there. Is that true ?

That's a Galaxy thing, not the game. The expansions are installed, but have to be initiated in Galaxy for some bizarre reason. I don't use Galaxy, so don't know the precise steps to take.
