UPDATE:

Original problem is fixed, now it won't let me activate the in-game overlay without downloading 25GB again :D And everything is working in fact, DLC's are installed too and galaxy client recognized my game time, so where's the problem?

I'm sure I'm not the only one to have posted this. This is what I do:

1. Install the game using the DVD's
2. Import the game folder in GOG galaxy: C:\Program Files (x86)\GOG Games\The Witcher 3 Wild Hunt
3. Import starts... verifying game data...
4. DOWNLOADING GAME :D

The galaxy client allocates the 28GB of data for it to download when it's already installed... why? And of course, I cancell the download because it doesn't make sense, the game is already installed :D

P.S.: Spanish when? You are forgetting a country simillar in size and population as France or Germany, and those have GOG in their languages. Not to mention the fact this language is also spoken in almost all South America and parts of North America...

Sounds like your physical copy is way out of date. Old versions cannot be patched to 1.31, so Galaxy is re-downloading the whole thing.
That's kind of... well, I don't want to say it but it is. stupid. So Galaxy is unable to implement incremental updates? XD

I don't regret purchasing the game physically, Witcher 3 is a game worth having in my games shelf. But Gog is still lacking LOTS of features and I really would like to redeem the code in Steam over Galaxy, to be frank.

Also, I'm hesitating about one thing. Galaxy only allows me to download the English version, while the game is already installed in Spanish. Does it matter? Would that turn the game into English?

I guess it has been reinstalled in english because there might be no spain version. Have a look at the options menu of gog W3. There is a dropdown-menu to choose the language. Sorry but I see no spanish...


Edit: If I change the language from german to english only the voiceouts change. If I leave the subtitles on, they stay german - as well as all texts ingame... Very irritating.

It's no different on any other platform, like Steam. If you install a very old version, incompatible with current versions, the platform, whether it be Origin, Galaxy, Steam or whatever, is going to have to do a very large download to bring the game up to date. If your current installation wasn't so old things would be different. It's just the way it works.

For some reason, all those options are greyed-out for me... I can't select them. Galaxy only allows me to download the game in english...

What you are saying isn't the truth. If you have the game installed in Steam, even if it's the 1.0 version and there's a 1.7 version, game files won't be downloaded fully but only those that have been modified since your current installation. If this was the case with my Witcher 3 installation, it would have just patched those outdated files, not the whole videogame.

Anyhow, I managed to make galaxy to recognize my installation. Now it's updating only 10GB instead the whole game. I think my galaxy client was outdated, now I'm using the latest version (still no Spanish in it BTW). Does CD Projekt RED have any problem with Cervantes' language? :P Hire me, I will make the translation! XD

Now I have another issue, when I activate in options the in-game overlay, it tries to download again the whole 25GB :D C'mon now, tell me that's totally normal and it happens in other platforms :P

It seems you lack the reading proficiency to understand the main problem: the client doesn't update properly game files. It doesn't recognize the fact files from DLC's are already installed, it's the same problem from the beginning, the exact same issue.
And about your original statement, that doesn't relate to the matter at hand, and you seem to not understand it either, that was my point too the 1st time I told you Steam doesn't behave like this. Let me try to explain it again:

1. You install a game from DVD
2. The game updates from the client, doesn't matter if it's Steam, Origin or whatever you want.
3. Only game files that need to be updated are being downloaded, NOT THE FREAKING 25GB of The Witcher 3 installation.

This is false. This problem was related to the galaxy client being OUTDATED. After installed the latest version of galaxy client, it started to download 10 GB not 25 GB... I hope with my latest explantion you finally understand the issue.
