According to the official notice (http://www.gog.com/en/page/witcherbackup) you claim the full GOG.com version of the game with all the premium extras too, basically its a DRM free copy for your GOG.com account for those who have retail copies or DRM online ones like from Steam.
I know that, I'm just curious if polish version will be included. GoG version of Witcher 1 has a sweet multi-language with polish subs and voiceover, unfortunatelly Witcher 2 does not include this. DRM free backup would be cool, but I'm not gonna play it in english. Any word to polish fans GoG?

I thought you could download the languages in audio/subtitles that you want optional though the game itself, at least I had this option with my retail copy not sure with my steam copy though.
The version on GOG comes with this:

Dubs: English, German, French
Subs: English, German, Spanish, French, Italian

You can set these by going into the options when you open the launcher.

I do not know whether they also include subtitles, but I think they do.

As for the Russian language pack, that's Steam only I guess. It would be awesome if all possible language packs were available through GOG though.
