It bothers me that after completing Troll Trouble (without killing the Troll) he's suppose to rebuild the bridge, but instead he just sits there looking as depressed as he was when you first find him. I dont expect to see a finished bridge, but can he at least be given a different AI routine to at least "look" occupied with bridge work?

Bad jokes aside, I think a few days is way too short a time to completely rebuild a bridge, especially for a troll recovering from alchoholism and the loss of a companion.

Yeah, but he could at least be busy building.
I finished the quest couple of hours ago, and now I feel sorry for the poor being whenever I pass the area and see it sitting there all alone, lonely and depressed. I guess giving him his mate's head wasn't really the best idea, but I didn't want to carry it around, and the troll is so retarded (literally) it can barely string words together to form a sentence anyway.

Don't be like this. Trolls are adorable and extremely intelligent for a "monsters" (for the lack of better word).
