I hated how in The Witcher 1 you could complete quests only in a certain way. Is it still like that in The Witcher 2??

I didn't really have the same impression - I had at least some options in most quests in TW1.

But for what it's worth, in TW2 up until now (I'm still in Chapter 1) some quests can be done only one way (but for monster contracts or fistfighting contests it's not really a bad feature); other quests can be finished in different ways.
Most of the quests have at least two solutions. The only ones that don't are just the little minigame quests.
I should have explained in more detail...
For example, first I need to talk to character A, then B, and then go to location C to complete the quest. But I could, and did talk to character B first, and now when I talk to character A, the log doesn't update so when I go to location C nothing happens.
Something similar happened to me with the Berengar's when I was playing The Witcher 1(GOG's version).
