Currently I am only able to only select 1680x1050 resolution. There are no others listed. Any idea how to fix this?

No but I have the UAC turned off, so nothing would stop it running as an admin.

Yeah, running as admin is proably redudant in that case but id' try it anyway.

Not sure what could be happening there. Assuming the game installed properly it could be something wonky going on wih your gfx drivers or some setting being enforced throughh your gfx card CP. I guess those would be the first two i'd look into but i don't know of a sure fix or workaround to share with you atm.
