It seems that patch 5.1.1 came out as a hotfix for 5.1.0 that came out the same day. But for some reason they deleted patch 5.1.0 from download section. So how can I update the game w/o redownloading the whole thing again?

Why delete "old" patches (if several hours can even be seen as "old")? Is there a good reason for this or just a management oversight on GOG part? If that's the case - please, GOG, stop deleting old patches. Keep at least several patches for people who doesn't check for new download every hour.

We never had a patch for version 5.1.0 as before we could make an offline patch 5.1.0, version 5.1.1 was already being delivered.

As for updating, if you already used the 5.0.3 patch, then just download the 5.1.1 patch, run it, and you should be good to go :)

Didn't work for me. It says my version is not compatible and I need to download new installer. I used GOG Galaxy to update from v4 to 5.0.3 though, is this the reason? So now I need to stick to Galaxy for updates?

For your currently installed game, yes, but you can always back up your saves, uninstall your Galaxy-installed or updated version, install the offline version, and keep that one updated via patches :)

My theory is because there was an update (version 5.1.0) delivered via Galaxy and then soon after version 5.1.1 was delivered right after that. It's just a theory, though, as I don't know much about Galaxy on a technical level myself.

Still, I clearly remember such thing happening before (old patches being deleted prematurely), namely with UnderRail game. Please, keep at least 3-4 previous patches on download section.
