I am currently in free mode and have mastered both the robber and thief proffesions. I would like to try the other ones with my current character but i cant build any of the other professions buildings when i switch to them due to lack of room. I have destroyed many buildings in the hopes of opening up new areas to build, but even after waiting for 5+ years the ground still remains unbuildable. Is this a bug, or do i need to wait longer?
A side question is what is the highest honorary title? I have gotten the prince one, and was wondering if anthing came after it.

After Prince is "Prince of The Empire". The games told me that was the highest I could go.
You can only build if the building has: A free space, large enough to accommodate the building. I think there might be some restrictions on where certain buildings can go, not all spaces have room for some of them.
What Ois said is true; for example, you can't build any workshops on the site of demolished houses/workers' rests. (BTW, what were those "many buildings" you destroyed?)
Also, if there is appropriate space for a building, you can build it there right after the dust settles, you don't have to wait any number of years.
And to end my post with a suggestion: if you feel you're ready, try Nuremberg. Now, THAT is one large town, and you won't have to worry about building slots for quite a long time.

Also if you have saved up a bit (or had a few wealthy partners /cough) I found it easier to buy out a low level building of the profession I wanted to go into after spending my AP to change rather than trying to find room for a whole new building.... or getting to be mayor gives certain rights with buildings in towns apparently... but i haven;t tried that yet,

I had destroyed a bunch of guard houses that i had taken over and tried every proffession to see if i could build the oppropriate building. I had also bought a church, the one in london next to the market. It turns out I was able to build another guard place on top of the old guard sites, however when i destroyed the church I was not able to build a new one, or any other building on top of that location.
I would'nt mind being able to buy a building, however there are no lvl 1 buildings left in the city. I guess ill have to try to sabatoge them out of existence and build on their old spots, or try Nuremburg.

If you have a Castle, you can also have a cannon tower with which you can bombard buildings. (NOTE: Using a cannon tower may or may not be forbidden, depending on current policies.)
