Couple of questions which might help:
How much different do these games look and how are the acting performances? How are the resolutions between the two?

The 11th Hour has much better video quality for FMV sequences. Both have great pre-rendered graphics, but The 11th Hour stands out as being better graphically. It plays videos at 30 fps in full screen.

The acting in The 11th Hour is a bit more cheesy, like in a B-movie or cheap horror, than in The 7th Guest.

I would start with The 7th Guest first, and if you like it you can probably get The 11th Hour in sale sometime in the near future. Some find the puzzles in these games to be a bit silly after awhile, and The 11th Hour also has tedious "treasure hunts" that require lots and lots clicking on objects.
