I've bought the Talisman: Digital Edition and the DLC Bundle. The game is really awesome but the problem is, that you have to install all 50 dlcs for themselves ... Isn't it possible to make a complete installer?
This would be awesome also for backup reasons.

I just updated the GOG Galaxy client then the Talisman base game and all DLC installed all together.
That's right, but I make a backup of my favourite games on my usb-stick and it's really annoying to have 40+ setupfiles.
I second the idea with a complete installer (or at least a separate patch) because I'm not using Galaxy, and the game has been updated recently, so guess what - I had to install everything again.
Thirded - it's quite ridiculous to have to run an installer for *each* addon character.

A query for PatPoison - the DLC Bundle sold by GOG has 31 items - where did your extra 19 come from?

As listed near the end of the description on the store page you linked to, there are 18 DLC not included in the DLC Bundle, which is called the Season Pass on Steam. As such, it was only meant to include the expansions that were based on those that already existed for the tabletop version (+ all the character DLC released in that same timeframe -- save one that was originally a charity-benefit thing -- as well as, for some reason, the Complete Runestone Deck, whose only purpose is to instantly unlock meta-game buffs which one could already gradually unlock through normal gameplay). Everything released after The Cataclysm Expansion -- comprising 3 expansions, 8 Legendary Decks, and 7 characters (including the for-charity character left out of the Season Pass) -- has to be bought separately here, as I don't think there was ever officially a "Season Pass #2" -- certainly not here.
