I'd like to know if I can install different versions of this game as I've heard from friends that through updates the game's gotten easier/lame.

I'm pretty sure you can. Perhaps this will help:

FWIW, the game is awesome in its current state and plenty challenging. The top speed runners might have had an issue with the new update, but I think the current version is a lot of fun.

I just updated a game to see if I can rollback as easily and I can not. It looks like the developers have to allow it or upload the updates so that you can select to downgrade to a previous version. That's why I asked if it's possible to do for this game, I'd guess not. Seems like the only way to keep older versions if the devs don't provide an easy way to rollback is to download the installer each time there's an update (if it includes the update ofc).

On GOG Galaxy you can just download which patch you want, but it only goes back 5 versions from what I can see (So v05 is the earliest available.)
