I just recently started playing Stellaris on Steam (was sittin in my backlog for a while) and having a blast... and with the sale on it + DLC on GOG my wallet got worried but it got lucky when I found out that the DLCs only apply to the DRM free version on GOG it seems. :)

That in turn got me looking into GOG Connect, seems it was briefly running for Stellaris but got stopped due to bugs?
Will this ever be enabled again for GOG Connect?

it was stopped by Paradox not by bugs and i would not expect things to change anytime soon because Paradox is going down the pay-to-play road

as for Stellaris, Gog, Steam and Paradox versions don't play nice with each other so installing Steam + Gog Stellaris on the same system = errors

if you want Steam then pay for the Dlc there... its your cash
and if you want Gog then the main Stellaris game is almost always on sale... you stiil get Paradox with Gog [for now]... not sure if they offer it with Steam but Steam should be able to answer that question for you so , good luck
I got sick of waiting for it to appear... in-fact I don't even remember seeing it on connect at all.

And the expansion prices seem to keep creeping up so I figured now was a good time to switch while the entire collection is 50-75% off. For some reason my Steam copy hated the Paradox launcher so I couldn't get any multiplayer functionality to work unless it was with other Steam players. The GOG version was flawless. Installed, online and in the lobby in no time.

Paradox are being very picky with what they put on GOG. We're still yet to see Hearts of Iron, Europa Universalis 4 and Crusader Kings 2. I suspect it's due to the reliance on Steamworks and Worshop, something which this new launcher is trying to overcome with Imperator and Stellaris (and others)...
I see...

Well, I would have no problems to switch over to the GOG version, but I would rather not buy Stellaris again, the DLCs are pricey enough even with the sale. The base game is still fun enough for now.

I could of course just wait for the Steam Version's DLCs to get into a sale, if it's Steam or GOG selling them to me is not the problem.
Was just curious if there are any news about GOG Connect for Stellaris so I could make use of the sale here, if not now then at some point in the future.

Seems that while my Steam account is linked to my Paradox account, it also considers me owning Stellaris. Which means I could also download and play their Launcher's version should I need to. Is there any merit switching over to their version, since I don't own any DLC yet? Does this only influence multiplayer or mods as well? I am not much into multiplayer for those type of games but I could get interested in modding it at some point.

From what I can tell, using their launcher just opens up the ability to see multiplayer games from both Steam and GOG. The mod section of the launcher is NOT the same as the Steam one. Not everything is available there that is on Steam. But they CAN be if people upload and submit them. But the mod section is open to all and doesn't require Steam Workshop to use.
the best part of the Paradox launcer is that all builds are in there... not just the lastest one or the last 5 [like Gog]

I don't know where did you get that idea from. GOG doesn't put random things in Connect, they had to make a deal with Paradox in order for Stellaris to be available in Connect. And when the game showed up in it was promptly removed because the Connect / Steam verification was bugged at the time.
bug = unexpected result

Allowing users who didn't have the game on Steam to redeem it on GOG, and blocking them from doing so if you had it was far from expected...

We're terribly sorry, but due to technical issues with Steam library verification, we had to remove GOG Connect for Stellaris.
