I have version 1.5.6 but how to know the more detailed subversion that is installed?

In Windows 10 you can go to Start menu > Windows Settings > Apps > Apps & features

Clicking on "Stardew Valley" should appear the full version number.

Are you talking about the offline installers or from GOG Galaxy?

This display the first installed version but if i update the game with gog patch not display the last version
