RetroCodger426: [ ... ] because as far as I know it won't update an existing installation automatically if you use a non-Galaxy method, and seeing as there are no links to updates, getting the latest installer and reinstalling seems to be the only option.
KrankyKat: Incorrect, at least for this game.
I don't have/use Galaxy and I have not uninstalled this game to update it. All I've done is download the full game/installer that my Library shows (eg, "setup_stardew_valley_2.3.0.5.exe"), doubleclick it to start the install process, and the install just updates the game. I'm guessing it detects there's already a previous install and just updates the files required (or all of them - in any case seems no need to uninstall first).
...anyway, may not apply to all GoG games/updates, but works fine with Stardew Valley, for me.

Indeed, you're correct, you don't need to uninstall it for it to update.
I just meant it doesn't automatically update itself as it does with Galaxy, and using other methods you can't select different versions, just the latest one. I had just assumed that using the latest installer replaces all of the files, effectively uninstalling the entire older version then replacing it with the new. :)
