I have been unable to play x-wing on fullscreen on my laptop. I have tried alt+enter to no avail. Am I missing something, or is it not possible?

Which version, the Windows or the Dosbox version?
If Dosbox, make sure the window is active when you press Alt-Enter.

Windows. I just downloaded it the other day off gog.com. Installed it. Clicked on the program. And BAM! Xwing on 1/3 of my screen....
