You should have three versions of TIE Fighter in your GOG account. For some reason, the 1995 Collector's CD version, which was added later, does not have any extras. But the extras are included in the other two versions (the 1994 and 1998 versions). Actually, these two versions have DIFFERENT extras. The strategy guide and manual are included with the 1994 version, whereas the 1998 version has the updated manual for that release, plus a DIFFERENT strategy guide.
Anyway, if you download the extras from both the 1994 and 1998 versions you should get everything you need. This is easily done from the GOG webpage, just click on the games in your library and you should see the extras ("game goodies") listed on the right side. On GOG Galaxy it's a little harder to find, just click the game, then the "more" button, then choose to download extras from the drop-down menu.
