sllloyd1: So when I purchased Tie Fighter, GOG says that nifty things like the game manual, etc, are included. I have gone to the GOG folder on my hard drive, and have looked at all the txt files.
I can't find them.

Most of these will be included as "extras" that must be downloaded separately from the base game. Through the GOG website or GOG Galaxy, look for an "extras" menu under the game in your library and download the files from there. Also, I'm guessing most of these are PDF files, not txt files, so take a look for PDF files in the game directory also (often the manual is there already, in addition to being included with the extras).
And, as others have mentioned, the GOG purchase comes with three versions of the game, and only two of them actually have the extras included. So if you don't see any extras, try checking one of the other two versions, and getting the extras from there (you don't need to install those versions, extras are always a separate download that you can get at any time even if you don't install the game).
