Am I right to assume that if I choose Roland LAPC-I / MT-32 in the setup.exe that I can get general midi music? I don't have MUNT or an actual MT-32 installed, so in the absence of that, does it default to general midi? I mean, it is playing music, so what's it playing?

No.
It will send MT-32 midi signals to your midi device, but since you aren’t using an MT-32 compatible midi device, it will sound incorrect. The midi device will try to interpret the MT-32 midi signals as General Midi signals, but they aren’t interchangeable, and the instrumentation will be off. This game has no true General Midi support, so unless you set up a MT-32 or Munt, then you are better off with Soundblaster.

Okay, gotcha-- thanks for the explanation it makes perfect sense. After all these years I still get confused by all of the audio options in dos games.
