I seem to have trouble sometimes getting all the right plans for a race. Anyway, I'm missing the dwarven Defender, M. HQ and Great Armory. I think they may be on Stoneblade Mountain... maybe in the chest that needs an implement as a key and is connected to the Menhir? I successfully got these plans with another character, but have forgotten what I did/where I got them and am at a loss right now. Any help would be appreciated!

As a general rule, plans for any race are not found in chests that are locked. I don't know exactly where the dwarven plans are, but if you backtrack a little and look near entry and exit gates to places you've already visited, you should find them.
Correct me if I'm wrong, but isn't Stoneblade Mountain an entirely optional location? If so, I doubt that critical plans will be found there.

Yeah, I think SBM is pretty much optional, so I also think you're right. Backtrack... that's what I'll do.

Hey ,
The medium HQ; defender and the other plans should be in greydusk vale not far away from that Urias guy. Just have a nice walk in greydusk vale and you should spot them easily
