You can dismantle all facilities and grab the resources, then simply leave the ship behind when you jump into hyperspace.
An easier way to dismantle is to select the ship, then choose "dismantle" from the buttons at the bottom of the UI. You can select multiple facilities this way.
You can also delete the hull (Mining pods will acquire hull scrap that way) if you want to strip it completely.

Everytime i do a salvage, the flooring stays. The only thing that gets stripped are the actual hull on the outside.
There's two ways to scrap a ship (That was yours at some point). You can keep it as your ship and then manually dismantle each facility, delete hull pieces etc.
Or you can abandon the ship and it becomes a derelict ship, which then uses the "Salvage" method. This method scraps the outer hull walls (Leaves the floor pieces), and also all facilities.
Using the first method is better in terms of acquiring resources.
NOTE! The first method only works if the ship was yours (In your fleet) at some point. Derelict ships you find when traveling will ONLY have the salvage method available.
