I can't find how to install it, and when I start a new game it doesn't ask me to choose between the original game and the expansion.

Its kinda hidden (which is stupid). Wages has a separate shortcut assigned to it that dosen't get dropped on your desktop. You can launch the game (Wages of Sin) from your start menu.

I can't find it on my start menu, and the SiN gold folder doesn't appear in the GOG.com folder.
I can only find the regular SiN executable.

Hmm... it should have dropped a shortcut (separate from the Sin Gold shortcut) in that same start menu...

The difference in the shortcuts is an added command line in the shortcuts target. You could try this:

1) Make a copy of your sin shortcut

2) right-click on the shortcut and go to properties

3) click on shortcut tab and look at where it says "target". You will notice at the end of the file path a command line that looks like this: +exec autoexec.cfg

4) Replace +exec autoexec.cfg with this: +set game 2015 +exec autoexec.cfg

And/or If that doesn't work, try reinstalling the game outside of program files as an administrator (right-click on installer, select run as administrator). It is possible that your computer didn't allow some files to be written, assuming you operating system is vista or later.

It worked but now I have this Sin Gold icon that rendered itself as .ink file and won't go away. =(

Heh, that would work if it was there. Nevertheless the good news is I now have both sin and wages of sin working and the other sin icon returned to being a icon the next day and was deleatable. =)

So all's well that ends well...
Just to let anyone with this problem who comes across this thread, I wrote down the proper way to launch "Wages of SiN" from within GoG Galaxy (v2.0.25): /forum/sin_gold/properly_launching_wages_of_sin_from_within_galaxy .

It say on my SiN Properties Target: \GOG_Games\Sin Gold\sin.exe"
