I'm running the game on a Mac that exceeds the minimum requirements, barely, but it does. I have all the settings turned down and the game still runs choppy, <20 frames probably, especially when approaching particle emitting objects.

Computer Specs:
OS X 10.10.1
i7 2.93 GHz processor
ATI Radeon HD4850
8GB Ram

Anything I can do to get a decent framerate?

According to your hardware you should get a decent framerate. There's something else wrong.
Does your system have a second integrated graphic chip activated? Maybe the game's not using the Radeon.

Nope, that is the only graphics card I have in there. It's a mid 2010 model iMac, if that helps. I thought I'd be able to run it fine, maybe even on medium settings. Definitely didn't expect slow with all settings at minimum values.

The native Mac version was released long after Pnauts initial release and showed rather mediocre performance at first. DoubleFine patched it later on but it seemed to be still slower than the other versions. Try setting your general graphics settings (not in-game) to default and deactivate AntiAliasing. Also consider running the game in a smaller resolution.

I've already tried it at 640x480 resolution (the lowest it goes). That doesn't seem to help. I don't think Macs allow you to set your general graphics settings... At least, I've never done it. Where would one go to do this?

Sorry, I forgot that ATi doesn't provide a control panel for OS X anymore.
If nobody else has got a good idea here, I'd send a support ticket. You meet the minimum system requirements and it's not running smoothly. Maybe GOG staff has a good tip for you.

Yeah, I'll have to do that. Thanks for your help.
Just posting this for anyone else having the same issue as an update. There is still no solution. I opened a support ticket to GoG.com. They recommend me making a post on the Double Fine official support forum. I did not get a response there that was able to fix my issue.
Thanks for the feedback, blakekl. I'm sorry to hear it hasn't worked out yet. Hopefully DoubleFine comes up with something.
