I have established businesses, and convoys doing trade routes. How do I get my convoys to take goods out of my warehouse. I would like them to either sell them, or deliver them to another cities warehouse, but I cant see how to do that using the "edit route/trade window". Or, does this need to be done manually?

You can do it with the EDIT Route:
Click on the Name of the town,
use manual trading
tell the convoy which goods to load or unload (click on the picture to switch between warehouse and town)
