These are game mods you can play EE in. If you pick Original then EE would try to feel more like original PS: T. You can read description of each mode there.

Also you receive original PS: T to Library when you buy EE as standalone game.

But unfortunatelly, you don't get gift code at all if you have original PS: T. Here are official answers from GOG support I received:

unfortunately the original version of Planescape: Torment is not provided as a gift code; it is directly added to your account after purchasing it. If you already own the original version, you don't receive an extra version of the game. I'm sorry if this is an inconvenience.

Thank god I save all my GoG games on an external HDD! I wont let them take away the games I have paid for!

They are not taking anything away.

If you already own the original game and buy the Enhanced Edition, you get the Enhanced Edition added to your account and still keep the original. You will then have both versions of the game.

If you don't own the original and buy the Enhanced Edition, you get both the original and Enhanced Edition added to your account. You will then have both versions of the game.

What some are upset about is that if you already owned the original version of Baldur's Gate, Icewind Dale or Baldur's Gate 2 when you bought the Enhanced Edition, then you received a gift code for ANOTHER copy of the original, essentially giving you two copies of the original version. That didn't happen with Torment. You don't get a gift code for the original, you just get the original added to your account if you don't already have it.

Yeah, I have noticed, I can still download PS:T.
However, I can't see it on the games list in the store.

That's because it was removed from the catalogue. But if you already own it, you still keep it.

The issue is GOG not properly communicate how the original game will be delivered and the fact that you won't get another copy if you already own it, making the deal a lot less appealing (you basically lose half the value of what you are purchasing).
Right now GOG is selling something that it doesn't actually deliver without properly informing the customer and that's a grave issue that it's being overlooked.
