It's called Patch (1.7 to 42927_Main) here on GOG. Appears it's up for Galaxy and stand-alone manual patch (I didn't try the link for the latter, but it's there under the DLer links).

Patch 1.71 (02 November 2018)

Fixed an issue where NPC dialogue could reset if the player's inventory was too full to receive a reward.
Improved icons for underwater products.
Fixed an issue with biological horrors and jellyfish in Permadeath mode.
Fixed an issue with the hypnotic Abyssal Horror and clam in multiplayer.
Disabled gestures while on ladders.
Improved some underwater sound effects.
Fixed some rare crashes.
Fixed an issue where the interior of the science frigate could be missing.
Fixed an issue preventing building multiples of storage container 1.
Prevented an erroneous boost icon appearing while piloting the Nautilon.

I've downloaded this update, but I can't seem to apply it to my v1.7. Is there any more "step-by-step" instructions on what to do with this patch once it's downloaded?

What kind of error message are you getting? Are you updating with the standalone patch or trying through Galaxy (I assume the former)?

I am for sure running 1.7 currently, so I downloaded the indicated rar file and extracted it to the game folder (C:\GOG Games\No Man's Sky). I ran the patch executable, and got an error "Game installation not found, please reinstall". So I moved it to (C:\GOG Games\). Same error. I even tried in the GAMEDATA and Binaries folders with the same result. I checked the GOG forums, and haven't found anyone having this same issue, so it must be me doing it wrong.

I tried to use galaxy as well, but it can't find my installation of No Man's Sky.

The patch file shouldn't be .rar It should be an executable file and you can just run it from your desktop or Downloads folder. It should find your installation.

See attached picture for the file you want (circled in red). The DL should look like the file circled in green. Since it's an .exe, don't extract it or do anything with it at all. Just run the file by double clicking.

That's the exact file I'm using.
I'm attempting to update the fitgirl repack (http://fitgirl-repacks.site/no-mans-sky/) which claims to be 1.7+DLC. It's a fresh install without mods or any changes. When I run the executable, I get "Game installation not found, please reinstall".
Is there something I've missed?

I'm afraid you have me stumped. I don't see why it wouldn't work.
