So I've heard you can now own multiple ships. How can I do this? Whenever I buy a ship it just replaces my current one...
Even though a do own a freighter.

AFAIK (I haven't tried it yet but will Really Soon Now) you need to effect the purchase while in your freighter's hanger deck. There, and only there, you get an option to add the new ship to your collection.
