At first: In the current offline installer (date 09-2020) the required Visual C++ libraries are missing. For a player who doesn't know much about the subject (like me) this can be a real hurdle.

At second: I play the NWN EE in German and also refer to this version. I own the NWN EE since release via GOG and until then there were no problems.

In the now current version, V81.8193.16 (Release: 16. September 2020) since the update by Beamdog, there is a decent language mix of English/German in the game. This starts with the texts in the main menu and ends in the dialogs in the game (completely in English, only texts in German). Of course I have installed this DLC: https://www.gog.com/game/neverwinter_nights_enhanced_edition_german_extras

It would be great if something could be changed.

This seems to be a problem generated by the latest patch. As you can read here, you are not the only one who is currently experiencing this issue.
In other words, I think this is not a GOG's fault and the developers should fix it, as they said they will.
Meanwhile you could try this possible, temporary solution, even if it's a little complicated. Basically you have to manually substitute the audio files yourself.

The Thread in the Steam-Forum is hard to read for me but i wait for the new official Patch. They wrote on September "Thanks for the feedback, we're working on this issue" and now is December. But it's ok, i now have installed the old Version from NWN EE. I have Graphic-Problems with the new Version too and a few Scripts don't start in my playtrough (compared with the original version).
