Thanks but looking at this I'm going to probably have to stick with the default ones even though I don't like them that much as this sounds way too complicated.

I can only really handle a small handle full of steps before I just get overwhelmed and my brain shuts down.

Which is while I like the idea of mods and such on pc games in actuality I kind of hate trying to do them.

I was hoping it might be about as simple as like baldur's gate where you basically just put the files you download into a folder and are done with it.

Well that's pretty much what's involved.
Download Voicesets.rar & extract it into .....Documents\NeverwinterNights2\Override

Download Voicesets_2DA.rar
Extract it to your desktop.
look in Voicesets_2DA\Full 49 Voices\Motb\ & drag the soundset.2DA file into your .....Documents\NeverwinterNights2\Override directory.

Then delete the rest of the stuff you extracted to your desktop.
Okay now I don't mean to sound ungrateful but I found basically all of those rather lacking.

Several in fact just flat out had more than one person's voice clips to a single voice set and that will NEVER do.
