Since there is an option to build certain stuff in villages, so far it requires gold, not building materials, I am not sure if it's possible to build anything in castles since I do not own one yet, but are there any items I should keep? Like iron, or other stuff. Also should I just sell ale, wool and other items when I loot them?

In vanilla M&B you can't build. Just sell everything except food, & equipment.

I have played a lot of the original M&B and after the first game I never built anything in my villages. Castles cost more to keep than they generate in income, so be warned.

Building village improvements only requires money. Some items such as tools and velvet are required for moving your court, and oil and beverage is needed for feasts, but unless you plan to engage in such activities you're better off just selling them.

Assuming we talking about Warband here.

I simply was unsure, seen enough people refer to Warband as "Mount and Blade". Well then, nothing I can do but drop the link to the super awesome wiki which covers pretty much anything you might want to know.
