I think CMI looks pretty terrible with the default settings. Checking the Filter graphics setting in the options menu helps, but it still doesn't look like I remember the game.
Thankfully, I found that someone has written a better up-scaling plugin for ScummVM and you can download the patched version if you google "xbrz scummvm". You should find a Sourceforge repository with a file named "ScummVM_1.9.0+xBRZ_Win32.zip". I'd post the link but it seems that it's not allowed.

What I did is that I switched the scummvm folder in the CMI folder to the xbrz one and it seems to work with GOG Galaxy. I just don't know what's going to happen when the game updates, but at least so far everything works and the graphic are closer to how I remember the game.
