The manuals don't mention any of the shortcut keyboard commands that can replace mouse action.
Where can I find them?
And how do I quit the game/exit to dos?

You can find list of controls here. (point 2.1)
As for quitting, TAB brings up the control panel. To exit press Q.

Alt+Enter and hitting the X is what I've been doing, although Alt+F4 would probably work too if you want an actual shortcut..
EDIT: Just tested, Alt+Enter and clicking on the x seems to be the only way I can get it to close.
