usually I am not a big fan of survival games. I really like exploration games, and I often find that survival kills the exploration-aspect because exploring too much gets you killed.
So far surviving in Kôna seems to be limited to freezing, which currently just adds to the overall atmosphere and immersion into the game, which is nice. So far I could always reach the warm car in time, which luckily doesn't run out of fuel, and the General Store is a warm place where you can always save.
I noticed there is food, but currently I don't think it can be eaten. Several times I wanted to make a fire, but I did not have enough logs. I noticed that the fire doesn't burn for long, and logs don't re-spawn, so things may become tricky once you have to leave you car behind ... is the balance going to shift towards survival (management of resources) in the full game, or will it stay as forgiving as it is?

Ressource management is already part of the game, but there are places where you have access to an infinite amount of logs. When I play the game and take (almost) every item there is, I'm usually able to bring 2 logs with me, which is enough to build a fire. There are log piles almost at every house too.

You don't need to eat during the game. The steaks you find have another purpose (no spoiler, so I won't tell you what it is :P) Survival elements would be: not freeze to death, stress level and ressource management. You can usually explore a lot before freezing to death, but it can be a pain if you don't have the required ressources to start a fire, which is a way to add difficulty to the experience. Our game is more adventure than a walking simulator.
