It's better to not give a date than giving one and missing it. Again, I experienced this with Blasphemous' DLCs. They missed the regular release date and I was surprised. They gave a first date and it was even more delayed because they were reported bugs from the other platforms, and devs wanted to fix them before releasing it again. Gog also seems to control and validate every submitted update and it takes time, so devs may choose more carefully what they upload on Gog. It took one month to get that DLC after steam's release.
I understand how frustrating it is to not be able to play your games day one here. Personnaly this is not an issue yet I won't purchase anymore games here (except DLCs for games I already purchased here) because of the cut content for games having online features and the impossibility to play them on Geforce now.
To ease your patience, just check your backlog and finish other games. Check also Moddb or nexus and look for amazing wads or total conversions for Gzdoom or other free amazing games. Here some:
