I'm trying to figure out how to enable co-op for this game, but the multiplayer options are still greyed out.

Unfortunately, I don't think there's any way to enable multiplayer in Linux build. I even tried launching the Linux build through GOG Galaxy via cmd script (added as a custom executable), but multiplayer options were still greyed out.
Your only option is to run Windows version through GOG Galaxy (I recommend using Lutris for this).

I actualyl had some trouble getting GOG galaxy ro run on Lutris.
GGOG Galaxy really needs Linux support.
