If the item can be rotated it will be noted on the lower right corner of the screen. Hotkey is R.

Is it possible to destroy an item, such as a workbench, hopefuly returning the components it was made with?

All of the blueprint desks have a way to remove anything you build. You don't get a full refund though, mostly some wood and metal scrap.
