I've been reading reviews that have detailed the different shortcuts you can take (harvesting human body parts and fluids, cannibalism, that sort of thing) to get ahead in the game. Is this required to move forward or can you play a more (boring) straight and narrow path to move forward?

hmm... I think it is impossible to beat the game without "body harvesting".
because you need all the body parts to move forward in the game.

Without cannibalism, perhaps. You can eat vegetables, bread etc.

I'm not so sure. It seems that all the items have non-corpse alternatives with the exception of ash which makes me think you could. Certainly, everything you need can be bought but grinding gold is a pretty long process.
