Does the actual passage of time do anything in the game(s)? I notice it keeps track of what day it is in your save-file.

Note: I'm not referring to things like Snaf's food handouts or Fortuno's swampweed handouts in G1 that happen every day.

No, it doesn't. There are no quests with deadlines in the game.

It does a little, kind of. Some NPCs are only in certain places at certain times. Technically you can always go find them but that can be a bigger pain than it's worth. Also, I for one hate traveling in certain areas in the dark so I'll use it to wait for daylight before heading out. That wouldn't be a problem if you could use a torch AND sword at the same time but nothing is perfect.

I probably should have phrased the question better- I meant more do things happen after a certain number of days, rather than "does the time of day matter?"
