I looked up some info on this earlier and tried two things. Neither allowed me to Alt+Tab but now my framerate is way higher, which is nice :D

How can I get Gothic 2 to Alt+Tab?

Tried this?

In any case, every (non-GOG) version has flaws when alt-tabbing. But I'm using BFW mode and it alt-tabs far better now for me.
Can't Alt+Tab (GOG.com)
The GOG.com version prevents task switching to avoid some potential issues (e.g. crashing during FMV cutscenes).

Remove GOG.com fix
- Open Programs and Features (appwiz.cpl).
- Find and remove the GOG.com Gothic 2 entry.
- If you are using Windows 8 or later, install the Gothic and Gothic II fullscreen fixes.
- Gothic II will now allow you to task switch at any time.

Actually tried both of these and it still doesn't Alt+Tab.

Run me through these, maybe I'm doing something wrong.

When it says to "- Find and remove the GOG.com Gothic 2 entry." what does that mean? The only option I see is uninstall, which I don't want to do.

Also, when running the fullscreen fixes, can I run them anywhere or do I have to place them somewhere or do something else (like moving files around)?

As Arkose says:
2. Remove the GOG.com Gothic 2 entry; this is not the game, just the compatibility fix that blocks Alt+Tab.

It's just BAT that forces Gothic.exe, Gothic2.exe and GothicMod.exe to use some fixes; it doesn't depend where do you run it from.

Ohhh! It was a separate option! Didn't see that before.

Okay now it's running windowed but not borderless windowed (even though I set "zStartupWindowed=1")...

EDIT: Oh, crap. It's running worse than before. Now I can Alt+tab but there's this ugly distracting window border I didn't see previously...

Weird, definitely doing what it asks... in-game resolution is the same as my desktop resolution, batch has run so it is windowed zStartupWindowed=1...

EDIT2: Okay, I got it working. I had to work my way through a Polish youtube comment (which google didn't want to translate) into someone's blog, and through them into the SAME site I already found but to some kind of ALTERNATE download which APPEARS to be the same but actually works! xD

Some person's blog: http://addictedgamewise.com/gothic-0-making-the-game-work-on-windows-8/
[THANK YOU, NIKOLA!]

Mirror site to the download that worked for me: http://addictedgamewise.com/wp-content/uploads/2013/04/Gothic_fullscreen_border.zip

Now GOG just needs to let me mark my own post as the solution xD

In fact, this is what the GOGfix (you've had to remove) actually fixes. So, as you found out, you had to reinstall it, but in another way. :D

Well, now that would be some easy rep-getting. :D
