I am currently playing through G3 with CP 1.73, and one thing that's annoying me is that creatures/monsters/humanoids tend to "pop" into view suddenly.
Can anyone point me to the correct settings to modify in my .ini to amend this, so I can see them from further away? Preferrably without killing my fps completely. :)

Can't help with that but, I'm wondering: is it the popping that's the problem or the distance it happens? Seems to me that they kind of fade into/out of view, almost becoming transparent. Now, they are often hidden by vegetation and such and one cannot depend on the music and growls so do pop up in front of you. I rather like this as it adds some suspense.

I'd like it to be a little further... It's like, now you see the creature, then pop! It's gone. Even though you can still see trees or other stuff perfectly that are further away than where it "vanished". Also, I actually see the creature's shadow still, even though the creature itself has already disappeared.

OK, and they are still in arrow range (you can still hit them after they disappear) so I fully understand that. Might like to adjust it myself if you get an answer.
There is a way but it will probably lead to stuttering at some point because the game has to calculate much more NPCs and Monsters around you. I always played with an increased value and it was quite fun but it slows down the fps in certain areas. Since I never went to Nordmar I'm not sure how it will work there because people say the monster density in Nordmar is much more increased.

To increase draw distance you have to

- find your ge3.ini (it is in the Ini-directory where you have installed Gothic 3) and make a backup to easily restore it
- open the ge3.ini and find the line entity.roi=4000
- change the value

I have played with a value of 8000 and it worked but lead to much stuttering. It will slow down your pc a lot depending on your cpu power. The faster your cpu the better it works. But multi-threaded cpu doesn't help at all for this. If you're pc runs with 4.2 GHz than you can probably go with a value of 6000 without any trouble until you go to Nordmar and than reduce it to the normal value of 4000. Since people say the weather is usually very bad in Nordmar you don't have a good sight range anyway.

With a value between 6000 to 8000 you can climb mountains and even see the snakes down on the ground and shoot them with your bow or crossbow. It was a great experience for me but it really slowed down the game in certain cities because of the massive amounts of NPCs and monsters around the city which all get calculated with an enitity.roi value such high.

WARNING FOR USER PLAYING WITHOUT COMMUNITY-PATCH:
If you don't use the community-patch than don't increase the entity.roi value at all because there is a bug in the original game which leads to massive monster respawing in certain areas which will bring down your pc to 1 fps if you enter that area because there a hundreds of monsters around you and no pc of the world can handle to calculate all of them.

I set it to 20000. Still 30+ FPS.
I have I7-4910MQ if that helps.
The good thing is that you can see so far.
