You pay per game. After this you can download the installer for the game, save it and can allways install and play the game without any launcher.

The galaxy launcher is optional. If you use it, you can install and launch the game with the galaxy launcher.
You can download the installer files also via the launcher.
Every game can also lauch without the launcher in the installdirectory.

Only some multiplayertitles (Gwent as a example) must be launch via the launcher.

I always use galaxy only for installation and updates.
If launch the games via playnite (a open source universal launcher).

I'm not sure if I understood the question... You buy games here and play them - As much and as long as you want. You even get DRM-free installers so you can always install and play your games offline.

We don't got monthly subscription games on GoG (like WoW).
GoG is not a monthly service like the Live Service from Microsoft. You buy a game, you can download it, install it and play it whenever you want.
