I think there are many games I want to see on GOG, but there only a few instant buys - here the big ones.
Alpha Centauri - The only game of the Civ-series I never played. Beside this one I also want to see the old Civ1, Civ2 and Colonization. From hearsay (wikipedia) all rights are gone back to Sid Meier, so we need Firaxis to join.
Indiana Jones - Yes, I like Indi more than Guybrush ;-) Like many others here I really would like see all the old LucasArts adventures. Nothing more to say...
Leisure suit Larry 1 - The best Larry game. I really prefer the original text-based version with ega-graphics. Another wonderful series from Sierra is Space Quest. Kings Quest and Police Quest wasn't my taste.
GTA Vice City - The best GTA for me, because I love this special 80ies style (Miami Vice, Scarface, the music).
Doom 1 - Not as good as Duke, but also a fun game with great athmosphere and also easy to play for an non-hardcore shooter like me. It's a timeless game - a classic one.
Sensible World of Soccer - There are already 2 football games here, but beside Fifa97 and the old Microprose Soccer (my first football game) this is a real classic one (Kick Off1 was Amiga only and the other versions on pc wasn't so good). Easy to play and never boring.
